The most wonderful time of the year . . .

Spring, Summer, Christmas, its all rolled into one here in New Zealand. And for me the flavor that wraps this all up and embodies the goodness of the festive season, and refreshing happiness that summer brings to my body is the almighty lemon!

This weekend I was given a basket of organic citrus fruits from my adorable neighbor. So I decided to make lemon cordial.

Lemon Cordial 

3 1/2 cups of fine sugar 

1 liter of water 

1 tablespoon of citric acid

1 tablespoon of tartaric acid

Juice of 8 large lemons strained 

Finely grated zest of four large lemons 


Dissolve sugar over heat (in a non-aluminum saucepan), add citric and tartaric acid and stir to ensure it is completely dissolved. Remove from heat and cool completely.  Stir in juice and zest and pour into clean dry bottles. Keep in the fridge.

Simple, delicious, and ever so easy to make xx
