We asked our Angels to share their favourite Winter Warmer recipes. This winter soup from Maddy's Nan was a firm favourite.
The perfect way to nourish and warm the soul on a cold Winter’s day...
Maddy’s Nan’s Chicken and Vegetable Soup
- 1 tablespoon olive oil
- 2 teaspoons grated ginger
- 2 minced garlic cloves
- 2 chicken breasts cooked and shredded
- 2 sticks celery chopped finely
- 1 carrot chopped finely
- 4-5 cups chicken broth
- 1 1/2 cups frozen sweet corn
- 3 tablespoons cornflour
- 4 tablespoons water
- Spring onions
In a large pot, heat the olive oil, then add the ginger, garlic, chicken, celery and carrot. Sauté for 5 minutes, then add the chicken broth and corn.
Bring to the boil and simmer for 20 minutes. Add the cornflour mixed with water, and keep stirring until the soup thickens.
Add salt and pepper to taste, and finally chopped spring onions (the green part).
All ready to serve!
