Angel Bakes - Ruth Pretty's Lemon Delicious Pudding

Ruth Pretty's Lemon Delicious Pudding

Ingredients
 
2 lemons
60g butter
1.5 cups caster sugar
3 eggs, separated
3 tbsp self-raising flour
1.5 cups milk
 
Method
 
Preheat oven to 180 degrees celcius, and butter 10 soufflé dishes.
 
Zest 1 lemon and juice both.
 
In a food processor fitted with a metal blade, cream butter and sugar, then add egg yolks.
 
Add flour and milk alternately to make a smooth batter. Scrape mixture from sides of processor bowl and blend in lemon juice. Transfer mixture to a bowl.
 
Whisk egg whites until soft peaks form and fold gently into batter using a metal spoon.
 
Pour batter into prepared dishes.
 
Stand dishes in a roasting tray and pour in hot water to come halfway up the sides of
the dishes.
 
Bake for 25-35 minutes or until a skewer inserted comes out clean.
