Annabelle's Doris Plum Cake

This week we're lucky to share a very special family recipe from our lovely team member, Annabelle.
Her Doris Plum Cake is a favourite at home, often requested for birthdays and family celebrations. Most of the time, it’s finished with a simple dusting of icing sugar (although rainbow sprinkles have been known to make an appearance for extra-special occasions!).
It’s a beautiful cake to bake and drop off to someone who could use a little pick-me-up, or maybe bring out the sprinkles if you have a special birthday coming up in your house too.
Ingredients
200g butter, softened
1 cup caster sugar
3 eggs
1 teaspoon vanilla essence
2 cups flour
2 teaspoons baking powder
70g ground almonds
½ cup (125g) sour cream
½ cup milk
6-8 firm, ripe plums, stoned and quartered
Method
Cream the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Beat in the vanilla essence.
Sift together the flour and baking powder.
Fold the flour mixture, ground almonds, sour cream and milk into the creamed mixture.
Spoon half the mixture over the bottom of a lined 22cm cake tin.
Arrange the plums on top, then cover with the remaining mixture.
Bake at 160°C for 70 minutes, or until the cake springs back when lightly touched.
Dust with icing sugar before serving.
