Grace's Caramel Macadamia Slice Recipe
This week, we’re sharing a favourite recipe from our General Manager Grace: Caramel Macadamia Slice.
Given Grace’s well-known sweet tooth, perhaps it’s no surprise this one is a little bit decadent! It was a favourite from her Wellington bakery, Sweet Bakery, with a buttery crumb base, smooth caramel and golden toasted macadamias on top.
We’re so touched to be able to share the recipe with you today.
For the Base
- 225g plain flour
- 75g caster sugar
- 175g butter
For the Topping
- 200g butter
- 400g condensed milk
- 4 tbsp golden syrup
- 1 cup macadamias
- 100g white chocolate
To make the base, process in the food processor the plain flour, caster sugar and butter. Press it into a slice tin and bake at 180 degrees for 10-12 minutes until a pale golden colour.
While the base is cooking, spread out the macadamias on a tray and place them in the oven as well to roast until golden brown (keep an eye on them so they don't burn!).
To make the caramel, put ingredients in a microwave safe bowl. Microwave in 2-3 min bursts until it looks like it has 'split' (separated). This might feel a bit strange, but it means it's ready to go! Once it has split stir it really well until the caramel comes back together and is smooth.
Once the base is done and cooled, pour the caramel over the base and gently spread it out to cover all over, then sprinkle over the roasted macadamias evenly. Melt the white chocolate and drizzle it over the top to finish. What a treat!
