We’re embracing Soup Season with our General Manager Grace’s favourite winter warmer soup recipe!
Grace says: “Every time my wonderful mother-in-law comes to stay she makes me a big pot of this amazing soup (it freezes well). It’s such a treat - my absolute favourite winter lunch.”
This recipe is perfect to make-and-take to your loved ones as a winter or get well treat, and freezes really well in individual portions. Enjoy!
Pumpkin, Lentil and Tomato Soup
80 g butter
1 large onion
1/2 tsp cumin seeds
2 tbsp pumpkin seeds
500g chopped pumpkin
2 tsp curry powder
1 cup red lentils
4 cups water
1 cup tomato puree
2 bay leaves
Heat the butter in a large pot until just nut brown. Add the onion, cumin seeds and pumpkin seeds and cook until the onion is coloured. Add chopped pumpkin and curry powder, cook for 2 minutes, then add the lentils, water, tomato puree and bay leaves. Simmer until pumpkin and lentils are tender, about 40 minutes. Season to taste and enjoy!
