Angel Makes: Nickie's Chocolate Pudding

This month Nickie from our Angel family is sharing the perfect winter warmer recipe to see you through the colder months - her famously decadent Chocolate Self-Saucing Pudding.

Chocolate Sauce 

  • 1 cup Brown Sugar
  • ¼ cup Cocoa Powder 
  • 1 ¼ cup Boiling Water 
  • 1 tsp Vanilla extract 

Pudding Base

  • 1 cup Plain Flour 
  • 2 ½ tsp Baking Powder 
  • ⅓ cup Brown Sugar 
  • ⅓ cup Caster Sugar
  • ¼ cup Cocoa Powder 
  • ¼ tsp Salt 
  • ½ cup Milk 
  • ¾ cup Melted Butter 
  • 2 Eggs 
  • 1 tsp Vanilla Extract 


  1. Preheat your oven to 180 degrees celsius.
  2. Mix the Chocolate Sauce ingredients in a bowl and set aside. Grease a medium sized baking dish with butter or canola spray.
  3. For the Pudding Base, sift all the dry ingredients together first, then whisk the wet ingredients together. Combine the dry and wet together in a bowl and mix.
  4. Pour the Pudding Base batter into your greased baking dish. Then using the back of a large serving spoon, gently pour the Chocolate Sauce all over the batter.
  5. Bake for 25-30 minutes, or until pudding is cooked through.
  6. Serve up and enjoy (with lots of ice-cream, of course!)
