Grace's Afghans

This week Grace mixed up some delicious Chocolate Afghans with her daughter Demi (though Demi was more interested in licking the beaters!). It was a fun lockdown activity, so here’s the recipe if you fancy having a go…

200g butter
1/2 C sugar
1 C plain flour
1/2 C cocoa
2 C crushed cornflakes

For the icing:
50g butter
1 C icing sugar
1/4 C cocoa
1/4 C warm water
Walnuts

Cream the butter and sugar until pale and fluffy. Add the flour and cocoa and mix on low. Add the cornflakes and mix gently by hand. Roll into balls and place on a lined tray, then bake for 8-10 mins at 180degrees. To make the icing, mix all the ingredients together until smooth. Ice biscuits with icing once cool and top with a walnut to each one. Yum!
