Recipe: Rebecca's Cheese Gems

 

As a special lockdown treat, our Angel Delivery founder Rebecca has shared her treasured family recipe for 'Cheese Gems' with us. Our team of Angels tried these just before lockdown and can confirm they are truly delicious!

1 C Flour 
1 C Self-raising flour 
1 1/2 tsp Baking powder 
Pinch of salt 
Large pinch of cayenne pepper or 1 tbsp sweet chilli sauce (optional)
2 C of grated tasty cheese 
1 egg, lightly beaten 
1 1/4 C milk 

Heat oven to 160C, and grease an 8-hole mini loaf tin. 
Sift dry ingredients, then add cheese and mix together.
Carefully fold in wet ingredients (don't over mix!).
Spoon mixture into tins and bake for 25-40 mins. 

Enjoy warm with butter, or store for up to 1-2 days in an air-tight container.
When ready to eat, cut in half, and grill in a sandwich press, top with butter and chutney. Divine!
