Classic Lolly Cake | School Holiday Bake

There are some recipes that just taste like childhood - and Lolly Cake has to be right up there.
With the school holidays upon us, we thought it was the perfect time to share this much-loved Kiwi classic.
Wonderfully simple to make with little hands helping, and just the thing for keeping the troops happily fuelled through the holidays.
And this one is extra special - it's a favourite from Grace’s former bakery, Sweet Bakery in Wellington, so it comes with a little bit of history too.

Ingredients
- 120g butter
- 250g Malt biscuits (1 packet)
- 200g condensed milk
- 1 Explorers lollies (previously known as Eskimos)
- Desiccated coconut for coating
Method
To begin, cut up the Explorers into bite-size chunks, and blitz the malt biscuits into a fine crumb.
Warm the butter and condensed in the microwave in 30 second bursts, until butter is melted.
In a large mixing bowl, mix the butter, condensed milk, biscuit crumbs and lollies, until well combined.
Tip the mixture out onto your bench and roll gently into a log shape (it will be a bit wet and sticky).
Roll the log in coconut, then wrap in Gladwrap.
Chill log well, until set solid - then slice up and enjoy!
